The Distilled

The Distilled - Chocolate on Chocolate Rum and Raisin Cookie

We created the Distilled in honor of one of the world’s most highly regarded SEO  Agencies, just in time for its long awaited SearchLove conference series. Founded in 2005 by Will Critchlow and Duncan Morris, distilled is now all grown up, just like this decadent adults only cookie that really packs a punch!


  • 2 cups raisins
  • 1/2 cup dark rum
  • 12 ounces good quality dark chocolate (minimum 70% cocoa solids)
  • 3 tablespoons of good quality cocoa
  • 1 teaspoon bicarbonate of soda
  • 2 cups all purpose flour
  • 1/2 teaspoon of salt
  • 8 ounces soft butter
  • 5 ounces light brown sugar
  • 4 ounces white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs, cold from the fridge
  • 12 ounces semi sweet chocolate chunks or dark chocolate chips
  • 4 ounces milk chocolate for melting

Tips before Baking: Preheat oven to 340 F, line baking sheets with parchment paper.

The night before: Place the raisins in a glass bowl and pour the rum over them. Stir lightly, cover and leave to stand overnight.

Melt the 12 ounces dark chocolate either in the microwave or in a heatproof bowl over a pan of simmering water.

Sift the flour, cocoa, bicarbonate of soda and salt into a bowl.

Cream the butter and two sugars in another bowl then add the melted chocolate and mix together.

Whisk the vanilla extract and cold eggs together. Beat them into the chocolate mixture, then stir in the dry ingredients.

Add the rum soaked raisins and extra chocolate chunks or chips, then mix them through evenly.

Using a medium icecream scoop and a flat knife, scoop out mixture in equal sized mounds  and place them on lined baking sheets about 3 inches apart. Do not flatten the mixture.

Bake for 18 minutes. Use a cake tester to make sure you do not see any wet batter before you remove the cookies from the oven. Let cookies cool slightly on the baking sheet, then transfer them to a cooling rack to harden as they cool.

When the cookies are cool, melt the milk chocolate in the microwave or in a heatproof bowl over a pan of hot water (use a flat dish to make dipping easier. Working quickly, carefully dip just the base of each cookie in the melted chocolate, then place them back on the cooling rack upside down until chocolate has set.
